3-4 fresh large tomatoes, sliced
1/2 red onion, sliced
2 avocados, peeled and cut into bite-sized chunks
1/4 cup chopped fresh parsley
1 garlic clove, minced
2 teaspoons dried oregano
Red wine vinegar (a good, strong red wine vinegar)
Extra virgin olive oil (the best quality)
Freshly ground black pepper
Place a layer of sliced tomatoes on a large serving platter. Arrange the slivers of red onions and the chunks of avocado over the tomatoes. Sprinkle with parsley, garlic, and oregano. Drizzle red wine vinegar and olive oil over the platter. Sprinkle with salt and freshly ground black pepper.
Serve immediately. Do not refrigerate.

This soup would be absolutely refreshing on a hot day. If you do not have hemp, avocado would work well as a substitute.

1 large or two medium cucumbers, peeled and seeded
2 green onions
.75 ounces dill (one herb pack, a little over 1/3 of a cup)
1 tablespoon + 1 teaspoon lemon juice
1/4 teaspoon salt (adjust to taste)

2 cups walnuts, presoaked 6-8 hours
2 cups pecans, presoaked 6-8 hours
9 medjool dates
½ cup raisins, presoaked 1 hour
¼ cup raw honey

I created this sumptuous raw treat as a dessert to top off the raw lunch I created for my mother's birthday last year. It's quick & easy to make, healthy & delicious to eat. Gone are the days when you would feel guilty about eating more dessert.

1 ripe sapodilla
1 banana (frozen)*
Cinnamon powder

* To freeze the banana: peel off the skin, slice it into discs, place in a ziplock bag and leave in the freezer. Frozen bananas have an ice-creamy texture when mashed.
