Salads are so important to the healthy Greek diet that a Greek will not sit down to a main meal without a salad to accompany the meal. A traditional Greek Salad would consist of juicy tomatoes, crisp cucumber, sliced red onion, green pepper, crumbly feta cheese and olives. Here's how to create your own, which can be served as a side dish or as a light meal with some crusty bread.

Ingredients:

3 tablespoons extra virgin olive oil
1½ tablespoons lemon juice
1 clove garlic (minced)
½ teaspoon dried oregano
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper, and extra for garnish

Sapodilla Dawn
Monday, 05 October 2009 19:21
by Elspeth Duncan

I created this sumptuous raw treat as a dessert to top off the raw lunch I created for my mother's birthday last year. It's quick & easy to make, healthy & delicious to eat. Gone are the days when you would feel guilty about eating more dessert.

Ingredients:
1 ripe sapodilla
1 banana (frozen)*
Walnuts
Raisins
Cinnamon powder

* To freeze the banana: peel off the skin, slice it into discs, place in a ziplock bag and leave in the freezer. Frozen bananas have an ice-creamy texture when mashed.
