In an earlier article on eating well and addressing your nutritional needs in Scleroderma, it was recommended that you avoid fatty and greasy foods. Foods with high fat content stay in the stomach longer than lower-fat foods, increasing the likelihood of the food backing up into the esophagus - which can be particularly undesirable if you're struggling with GERD. Today, we'd like to share a helpful baking tip if you're definitely watching your intake of fat: substitute Avocado for butter! You can drastically reduce the levels of saturated fat in your baking goodies such as muffins and cakes, by as much as 40%.

According to theKitchn, "You can substitute avocado for butter in a 1:1 ratio, but since it doesn't melt the same way it won't coat your dry ingredients the same. You need to increase your wet ingredients a little to compensate".

You would of course, need to blend your Avocado thoroughly to achieve the smooth consistency required. You may need also to decrease your oven temp about 25 degrees if you're going for a 100% substitution, just to prevent over-browning.
